Yep. A side of roasted asparagus.
Asparagus is one of my very favorite vegetables.
I look forward to it coming into season every year. And when it does, I make it as much as possible. I love it so much that I don't even like to add it to other dishes... if I'm having asparagus, I want straight up oven-roasted asparagus.
This "recipe" doesn't have exact measurements because I never actually measure. It's one of those things that you can't really mess up...
Wash and trim 1 lb. of asparagus (or more if you have a big family to feed).
Drizzle with olive oil.
Sprinkle with lemon juice.
Throw in some garlic powder (or minced garlic).
Oh, and a few dehydrated onion flakes if you've got 'em.
Add salt & pepper to taste.
Toss to coat.
Roast at 400 degrees F for 15-20 minutes.
Toss once during cooking.
Devour.
See? That was easy.
