I've been doing some holiday baking and thought I'd share...
If you love peppermint treats, these are the cookies for you.
White Chocolate Peppermint Cookies

Ingredients:
1 cup softened butter
1 cup sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon baking soda
1/2 teaspoon salt
3 cups flour
3/4 cup white chocolate chips
3/4 cup Andes peppermint crunch chips
Directions:
Preheat oven to 350 degrees F. In a stand mixer, cream together butter, sugars, eggs, and vanilla on medium speed. Switch to slow speed and add flour, baking soda, and salt. Mix until ingredients are just blended--do not over stir. Stir in white chocolate chips and Andes peppermint pieces. Refrigerate 30-60 minutes. Roll into 1.5 inch balls (I use a cookie scoop.) and place on a parchment lined cookie sheet about 2 inches apart. Bake 8-10 minutes and enjoy!
Makes about 4 dozen cookies.
