scalloped potatoes & ham...

we had an abundance of leftover christmas ham.  i cubed it and threw most of it in the freezer to add to soups, scrambled eggs, or fried rice later.  but my husband and i whipped up this comforting, hearty dish to warm us up during the crazy snow storm we got last night.
Scalloped Potatoes & Ham
Preheat: 350
Ingredients:
1/2 small onion
1/4 cup butter
1/4 teaspoon garlic powder
1/4 teaspoon pepper
1 1/2 teaspoon salt
1/4 cup flour
2 1/2 cups milk
2 cups cubed ham
6-8 red potatoes with skins on, thinly sliced (we used a mandolin.  it can cut super thin, even slices...and it's fun to use!)
1/2 cup shredded cheese
cooking spray

Melt butter in medium sized skillet.  Saute onions in butter.  Add garlic powder, salt, pepper, and flour.  Cook 1 minute.  Add milk.  Cook until think and bubbly.  Remove from heat.

Lightly grease a large casserole dish.  Layer half of potato slices and ham in bottom of dish.  Cover with half of sauce.  Repeat.

Cover with foil and bake at 350 degrees for 45 minutes.  Remove foil and sprinkle top with shredded cheese.  (We used cheddar because that's what we had on hand...but I think Swiss would be amazing.)  Bake for an additional 30 minutes.
